We make thousands of ARANCINI (pronunciation = ahhh-ran-chee-knee) These delicious balls of cheesy, warm, melting flavoured rice are our best seller at our daily summer stand in the markets Provence. The myth is that they have Sicilian Heritage - a little ASTUCE (french = trick/tip) - the fishermen’s thrifty wives would use up leftover risotto, make a big cold rice ball in their hands and fill it with whatever they had - ham, rabbit, cheese, veg. Then they’d encase it in breadcrumbs and deep fry it to keep the contents safe and warm in their husband’s pockets. We makes ours much smaller - bite size in fact. We use freshly made vegetarian risotto, some saffron for colour, and make them a little bigger than a golf ball - delicious with an aperitif…
